Grilled Mahi Mahi with Romesco Sauce

50 grams corn
10 grams onion
5 grams cumin seed
3 grams parsley
5 grams green pepper
5 grams red capsicum
1 gram paprika powder
5 grams fennel
5 grams radish
3 grams tarragon
50 grams romesco sauce

Romesco Sauce Recipe
250 grams seared tomato
7.5 grams tomato paste
12.5 grams roasted garlic
75 grams roasted capsicum
5 grams chopped parsley
5 grams dry chili
25 grams almond
25 grams bread
15 ml rose vinegar
salt and pepper to taste

METHOD
Chef-Kachain-(Chain)-Khhamanee1. Make romesco sauce by blending seared tomato, tomato paste, roasted garlic, roasted capsicum, chopped parsley, dry chili, almond, and bread then season with rose vinegar, salt and pepper.
2. Marinate mahi mahi with salt and pepper then grill until cooked.
3. Stir-fry corn, onion, cumin, green pepper, red capsicum and parsley then season with salt, pepper and paprika.
4. Plate with romesco sauce, grilled mahi mahi and stir-fried corn then garnish with fennel, radish and tarragon.
