30 grams yogurt
150 grams durian meat
10 grams lemon juice
5 grams salt
5 grams pepper
1 pc Gala apple
1 pc Granny Smith apple
50 grams strawberry
100 grams mangosteen
10 grams milk
10 grams bread crumbs
85 grams white shrimp (peeled)
30 grams tempura batter
50 grams fille iceberg lettuce
50 grams green oak lettuce
50 grams red oak lettuce
25 grams baby spinach
50 grams cherry tomato
50 grams Sunkist orange meat

Blend yogurt, 50 grams of durian, lemon juice, salt and pepper together.
Cut each of the apples into ¼-inch large cubes.
Slice the strawberry into rings.
Peel the mangosteen and separate the meat into segments.
Slice the remaining durian, dip into milk, and coat with bread crumbs.
Insert a wooden skewer into each prawn to keep it straight. Dip into tempura batter.
Deep-fry the durian and the prawn tempura until golden brown. Drain on paper towels. Remove the wooden skewers from the prawns.
Mix lettuce, baby spinach, strawberry, diced apple, shredded celery, radish and sprinkle with crispy durian and edible flowers. Add the fried durian and tempura prawns.
Serve with durian yogurt dressing.
