New South Wales Dukkah-Crusted Lamb Loin

1 pc lamb tenderloin, trimmed

10 grams dukkah spices (Egyptian spice blend) 

50 grams zucchini, cubed for skewering

30 grams fennel, finely sliced

30 grams white cabbage, finely sliced

30 grams red cabbage, finely sliced

20 grams spring onions, finely sliced

10 grams coriander leaves, picked

20 grams bean sprouts

10 grams baby spinach leaves

100 ml citrus vinaigrette dressing

some vegetable oil

METHOD

Coat the lamb loin evenly with the dukkah spice mix.

Skewer the cubed zucchini and coat evenly with the dukkah spice mix.

Combine in a bowl the fennel, white cabbage, red cabbage, spring onions, coriander leaves, bean sprouts and baby spinach leaves. 

Add the citrus vinaigrette to the mixed vegetables and combine.

In a hot pan sear both the dukkah-crusted lamb loin to medium rare and the zucchini skewer and set aside.

Dress the slaw decoratively on a plate.

Slice the lamb loin and place next to the slaw.

Decorate with the zucchini skewers and serve.
