Steamed Snow Fish with Beetroot & Curry Emulsion

INGREDIENTS

Sauce
100 g yellow curry paste

200 g whipping cream
100 g fish stock
30 g sugar
50 g fish sauce

Snow fish
150 g snow fish fillet
3 pcs asparagus
3 pcs cucumber

Beetroot risotto
100 g risotto
50 g beetroot
30 g Parmesan cheese
20 g butter
200 ml chicken stock
salt
pepper

METHOD

1. Season snow fish with salt and pepper
2. Wrap with cucumber slices
3. Steam for 8 minutes

Sauce
Stir-fry yellow curry until it separates then put fish stock and whipping cream. Bring it to a boil and season with sugar and fish sauce. Reduce until thick.

Beetroot risotto
Stir-fry the risotto then add chicken stock and cooked beetroot. Keep stirring until soft and cook then add salt, pepper, parmesan cheese and butter.

Serve
Place risotto on the plate then drizzle the sauce around. Place the fish on top and decorate.
