Italian Chef Alberto Bruni is doing wonders in his kitchen with foie gras. He is making a stunning terrine with fig compote, pan-seared on pears poached in red wine, prune and port wine sauce; stuffing it into ravioli served either oxtail consommé or rabbit saddle.
