Farmhouse cheeses are on the menu throughout November 2016 at Acqua, the cosy Italian restaurant at Centara Grand Mirage Beach Resort Pattaya. These cheeses are artisan-made with some using milk from a single herd of animals on the cheese-maker’s own farm.
A splendid introduction is the farmhouse cheese platter, priced at 890 baht ++ and presenting a varied selection along with aged balsamic vinegar.
Taleggio cheese, a soft, mild crusted cheese that originates from the valleys and steep gorges of Lombardy, is served melted along with a soft polenta, boiled cornmeal that also comes from northern Italy, together with crispy Italian dry-cured pork, for 790 baht ++.
Fontina cheese comes from the Alpine valleys at Aosta, where the cows are moved to a high altitude for part of the year to feed on rich grasslands that help give their milk a distinctive flavour. This cheese is served with chicken breast and cooked ham, and is priced at only 490 baht ++.
