Chef Yone has located two premium summer-time delicacies, Uni and Hamo, to inspire an à la carte menu of special dishes offered throughout August 2014.
Hokkaido Uni or sea urchin is a delicacy highly prized for its light fluffy texture and rich yet subtle flavors and commands high prices in Japan’s top sushi restaurants. Recommended Uni dishes include: Sea urchin and tsubugai shellfish clear soup, Grilled prawn and sea urchin with sea urchin sauce, Rolled Japanese wagyu beef with sea urchin, and Sea urchin tempura and fried sea urchin with rice cracker. Priced from 450 baht ++ to 920 baht ++.
Hamo or pike conger is a white-meat fish from the eel family with a mild and light flavor. Hamo dishes are priced from 350 baht ++ to 980 baht ++ and include: Hamo sushi, Hamo hot pot, Hamo and mushimi clear soup in tea pot, Soft boiled Hamo sashimi with two kinds traditional sauce and Hamo tempura with plum and tempura sauce.
Kisso is open daily for lunch from 12 pm to 2:30 pm and dinner 6 pm to 10:30 pm on the 8th floor of The Westin Grande Sukhumvit Bangkok.
