Chef Peter Lai Cooks at  Centara Mirage

Celebrated Thai Iron Chef Peter Lai has been cooking up a storm at Centara Grand Mirage Beach Resort Pattaya for the past week. Their SE Asian restaurant, Ginger and Lime, was the location for Peter to demonstrate his skills and lavishly display his signature dishes. Mick and I were fortunate to be invited to meet the chef and to enjoy his Chinese cuisine.

Tune in to Channel 7 every Wednesday night at 11:00 p.m. to enjoy the Thai chapter of this popular cookery show. Peter was born in Guangzhou, China, and moved with his family to Hong Kong, which was to be the starting block to his illustrious career in the world of gastronomy.

Our meal commenced with wok-fried king prawns in xo sauce (a Hong Kong original sauce made with dried shrimp, scallops and spicy seasonings); they were exceptional, beautifully seasoned, soft and succulent. We were then served fat, juicy (Japanese Hokkaido) scallops with a zinging chili sauce plus braised sea asparagus in oyster sauce. This was swiftly followed by chilled drunken chicken in shao hsing wine. All three were top-notch examples of their class with particular praise for the sea asparagus and the wonderful home-made chili sauce that escorted the drunken chicken.

With this Chinese feast we enjoyed a favourite wine of ours, Monsoon White Shiraz, which always attends S.E. Asian food with aplomb. A big tranch of beef steak in black pepper sauce was then served together with stir fried vegetables. The robust, full-bodied flavours of the beef provided the perfect conclusion to our parade of dishes personally cooked for us by Thailand’s Iron Chef.
